As shown in the overall drawing (cross section) of an integrated wet processing system, berries (over 90% ripe) are fed onto a feed hopper (1), then through a transport conveyor (2) the berries are dumped into a siphon tank (3 & 4) to be cleaned, as well as to sort out impurities. Then the cleaned berries are loaded into a bucket elevator (5) to a separator system (6). The separator system pulps the ripe cherries and discards the green ones. Pulper which usually consists of rotating disks each fitted with adjustable knives is designed to separate the bean from the flesh of the fruit while leaving each bean intact in its parchment envelope. The pulp is discarded, and the parchment is collected in fermentation tanks. Once the fermentation process is completed, the parchment is thoroughly cleaned via a mucilage cleanser (7). Finally the parchment is dried either by sun or by a mechanical dryer.
